Cake for one, in a mug

I love to bake, but I sometimes dread having leftover cupcakes or cake sitting around my place. If I have nowhere to bring my baking creations, the sweets taunt me every time I pass then, until they have eventually used their brain-washing powers to make me think that they are an acceptable meal.

So how do you combat a dessert craving without the devilish leftovers? That is when the mug cake comes in handy.

It’s so simple: It includes all of the classic cake ingredients, but it’s mixed in a coffee mug and baked in the microwave. This recipe, of course, has a twist to it, but still is not complicated. The peanut butter mousse topping adds that little something extra. Of course, the dish is rather sweet. I ate mine with a large glass of milk.

Chocolate Peanut Butter Mug Cake

What you need:
2 tablespoons butter
2 tablespoons peanut butter
1/2 teaspoon vanilla
1 egg
2 tablespoons sugar
2 tablespoons flour
3 tablespoons cocoa powder
1/8 teaspoon salt
1/8 teaspoon baking powder
3 tablespoons chocolate chips
 

What to do:
Melt the butter in a small dish. Add the peanut butter and mix well.

In the mug, mix together the vanilla, egg and sugar until well combined. Combine the flour, cocoa, salt and baking powder and add to the mug. Pour in the peanut butter mixture and mix well. Stir in the chocolate chips.

Put in the microwave for 1-2 minutes. Top with peanut butter pie mousse and hot fudge.

Peanut Butter Pie Mousse
What you need:
1 tablespoon softened cream cheese
1 tablespoon peanut butter
1/2 teaspoon vanilla
2 tablespoons whipped cream or cool whip
 

What to do:
Mix together the cream cheese, peanut butter and vanilla. Fold in the whipped cream.
