Palm Coast food connoisseurs can soon add another establishment to their list of places where they can eat. 

Zaxby’s, which is most known for its chicken fingers, wings, sandwiches and salads, is scheduled to open Monday, April 15, in Cobblestone Village, at 180 Cypress Edge Drive, near Florida Hospital Flagler’s medical complex and Carrabba’s. 

Zaxby’s confirmed via Twitter that the restaurant would open at 10:30 a.m. April 15. 

The new, 3,847-square-foot location will seat 90. There also will be a drive-thru.

According to an email from Barbie Bembry, permitting and zoning supervisor for the city, the contractor of the Zaxby’s was satisfied with his experience building in the city.

Typically, the contractor had about three revisions on similar projects, but this time, the contractor had to request 20 revisions after the plans were submitted, and the city assisted expeditiously with each one.

“The contractor who builds these all over the country was very complimentary of his experience here with our development team and building inspectors,” City Manager Jim Landon said on Tuesday. 

Landon also said the city has begun a program in which a postcard with project updates is sent out to property owners to streamline communications. “We’ve just communicated with the contractor so many times, and the property owner is left in the dark as to the status (of the project),” he said.

Although the postcard program wasn’t used on the Zaxby’s project, it will be used on future projects, Landon said.
