Chicken is a pretty regular item in my shopping cart, but lately I have been getting bored with its preparation. Then I found this recipe. It’s simple, quick and delicious.
It calls for Greek yogurt and dill for an easy, two-ingredient Tzatziki sauce, which I left in the recipe, but I am not a fan of the dryness of Greek yogurt, so I prefer to substitute this ingredient with hummus. (For a homemade curry hummus recipe, click here.)
Either way, this sandwich-like meal does not require a lot of prep time and definitely has flavor. I intend to use the mix of spices and lemon juice for several marinades, until of course, I get bored with it and find a new one.
