No stove? No problem, microwave baking with teens

Those who frequent the Flagler County Public Library undoubtedly know Young Adult Coordinator Miss Sharon. She is the brains and creativity behind the slew of activities for the teens at the library. She has been asking me for a while to come in and do a cooking workshop with the teens.

After thinking it over and deciding I am in no way qualified to be teaching teens how to cook, I thought, "What the heck?" and did it anyway. I thought I would do a simple cookie or brownie, something that didn’t require many ingredients. Then I remembered that I would be at the library.

The kitchen at the library is limited. And I basically only had access to a fridge and a microwave. Well, that sure was a game changer!

As I thought more about it, I decided that only having a microwave was actually a good thing. I could teach the teens how to make a delicious treat using simple kitchen appliance. Not allowed to use the stove? No problem!

I threw on my apron and demonstrated how to make chocolate mug cakes cooked in the microwave and then invited the teens up to the table to try their hand at making their own.

While all the teens appeared to enjoy their cakes, there were a few mishaps. Some put too much baking powder in, causing a small overflow; and some not enough, resulting in a more pudding-like substance. But none of that mattered. We had a fun afternoon baking, laughing and eating our creations.
 

Chocolate Microwave Mug Cakes
What you need:
3 tablespoon butter, melted
1 egg (lightly beaten)
3 tablespoon milk
4 tablespoon plain flour
3 tablespoon caster sugar
3 tablespoon cocoa powder
½ teaspoon baking powder
Pinch of salt
 

What to do:
Put butter into mug and microwave for 10 seconds to melt. Add in egg and milk and lightly beat with a fork until combined.

Add dry ingredients into mug and beat with your fork until mixed through. Place mug in the microwave and cook for 1 minute on medium heat.

Serve with lightly whipped cream or ice cream. Enjoy!
