Chef Hall to present at America Culinary Convention

The American Culinary Federation is gearing up for its 2014 National Convention, which will be held in Kansas City, Missouri, July 25-29, at the Kansas City Marriott Downtown.

Palm Coast resident Jason Hall, CMC, will be traveling to the convention to give a presentation called Full Utilization When Creating Recipes and Menus. Hall is one of only 67 ACF Certified Master Chefs (CMC) in the U.S. and is the executive chef at the Hammock Dunes Club. His segment will help attendees understand the fundamentals of how to fully use ingredients through the use of classic, creative and modern techniques.
 

Blue at the Topaz adds weekend lunch hours
The management at Blue at the Topaz will be extending restaurant hours to include lunch on Saturdays and Sundays.

“We are excited about bringing lunch hours back for the weekends,” said Kelli O’Reilly, Blue’s general manager and co-owner. “Our customers have been asking us to reopen for lunches and we are happy to offer our customers great food with a beautiful view during the day on weekends.”

Lunch is now served 11:30 a.m. to 2:45 p.m. every Saturday and Sunday throughout the year. Dinner is served every day starting at 4 p.m.

Blue at the Topaz offers indoor dining, as well as outdoor dining on a Victorian wrap-around porch. A sampling of their lunch menu includes scollop salad, greek salad, bbq chicken salad, black angus cheeseburger, fish tacos, wasabi horseradish honey crusted salmon, and a fish of the day entrée.
